Recipe: Tasty Tomato Pie – A tasty treat that’s great for your feet

The first thing you can do to fight back against neuropathy is something you may be overlooking:

Your diet.

There are tons of benefits that come when your diet is loaded with the right foods.

And one of our favorites is the tomato. It contains compounds capable of boosting the health of your hands, legs and feet. (1)

That’s because tomatoes have a carotenoid called “lycopene,” which research shows has the ability to reduce your neuropathic pain.

And there’s a special treat that we enjoy here around the office that includes the ingredient we’re talking about today…

We call it our Tasty Tomato Pie — and it’s super easy to make.


Recipe: Tasty Tomato Pie

Tomato pizza with goat cheese and spinach

Prep time: 20 min.


½ cup cherry or grape tomatoes, halved
½ cup Quick Tomato Sauce
1 teaspoon olive oil
1 clove garlic, smashed
2 cups packed baby spinach, washed
1 cauliflower crust
¾ cup goat cheese
½ small onion, halved and thinly sliced
1 tablespoon olive oil
Salt and pepper, to taste
Zest of half a lemon


First, preheat your oven to 500 degrees. Place 2 baking trays into your oven.

Next, place a medium sauté pan over medium-high heat, and add your olive oil and clove of garlic. Cook this combo until your garlic starts to brown and become fragrant.

Then, remove the garlic and throw in your baby spinach with about a tbsp of water. Let it sit for 1 minute and then start to stir.

Once your spinach has wilted, remove it from the pan and let it drain. Once it’s cool enough to the touch, squeeze out any excess liquid.

Now, go ahead and spread your tomato sauce evenly onto your crust. Dot your pizza with the goat cheese and place your spinach, onions, and tomatoes on top. (The inside of the tomatoes should face up.)

Drizzle on your olive oil and sprinkle everything with a little salt and pepper.

Slip your pizza into your preheated oven and bake it from 10 to 15 minutes, or until your crust is golden and your cheese is golden brown.

Once it’s done, remove it from the oven and sprinkle your lemon zest on the final product.

Now, just cut it into slices and dive in.
